Baked Apple Pancakes

Ingredients

  • 2/3 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 3 apples, peeled, cored, thinly sliced
  • 2 eggs
  • 2 cups milk
  • 2 tbsp. melted butter
  • 2.5 cups flour
  • 5 tbsp. granulated sugar
  • 4 tsp. baking powder
  • 1/2 tsp. salt

Directions

Delicious way to start the day, especially in the fall, when fresh apples are in season. Guests always ask for this recipe when we serve it for breakfast!

Preheat oven to 400 degrees.
COMBINE in 8.5" x 11" casserole:
maple syrup
brown sugar
butter
Put in pre-heated oven, on cookie sheet, for about five minutes until butter melts. Remove with care - dish will be very hot!
ARRANGE apples overlapping over the syrup. Set aside.
WHISK eggs, milk and melted butter
MIX in Medium Bowl:
flour
granulated sugar
baking powder
salt
Pour in milk mixture and stir until smooth.
Pour this batter over the apples
Bake for 20 - 25 minutes until puffed and golden.
TO SERVE: Slice and serve with warm New Hampshire maple syrup and Canadian Bacon.
