Chandler Mountain Grits

Chandler Mountain is known as the place to get the best tomatoes in Alabama. It's the view from our B&B. 4 1/2 cups water
1 1/4 teaspoons salt
1 cup regular grits, uncooked
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1 tablespoon butter, melted
3 medium-sized tomatoes, peeled and chopped
1/4 teaspoon pepper

Combine water and salt in a heavy saucepan; bring to a boil. Stir in grits; cover, reduce heat and simmer 25 minutes or until water is absorbed.
Cook onion and bell pepper in butter in a large skillet over medium heat, stirring constantly, until tender; stir in grits. Add tomatoes and pepper; cook until thoroughly heated.

Yield: 6 to 8 servings
