Breakfast Potatoes

4 - 6 medium red potatoes
1 small red onion
1 green pepper
1 red pepper
1/4 cup butter
2 Tbs. vegetable oil

Wash potatoes; slice and quarter. Slice and quarter onion and peppers. In large skillet, heat oil on medium heat. add potatoes, cover and cook for 20 minutes, stirring occasionally. add onions, peppers, and butter; season if desired. Serves 4
