Amy's Own Blueberry Almond Granola

Our MOST requested recipe! We serve this granola daily at the ranch and has been a favorite for years. We use our own prairie honey with gives a lightly sweet, delicate flavor. Try to use honey local to your area and be surprised at the difference it makes in the end result. We prepare this granola in large batches and store it in the freezer. We serve it cool with milk or vanilla yogurt. Goes well with almost every breakfast!

Ingredients

  • 6 cups Old Fashioned Oats
  • 3 cups Shredded, sweetened coconut
  • 2 cups Chopped Almonds
  • 2 cups Vegetable Oil
  • 1 cup Honey
  • 1T Pure Vanilla Extract
  • 1t Pure Almond Extract
  • 1T Cinnamon
  • 2 cups Dried Blueberry or fruit of choice

Directions

In a large mixing bowl, combine oats, coconut and almonds. In a microwave bowl combine oil, honey, cinnamon, almond extract, vanilla. Heat for 40 seconds or to warm and combine. Pour this mix atop oat mixture.

 

Spread mixture on two, greased half-sheet pans. Bake at 350 degress for about 20 minutes. Rotate pans and bake another 15 minutes or till evenly browned.  Remove from oven and let cool to room temp. Once cooled, crumble granola into large, storage container and mix in dried fruit. Serve with yogurt or milk. Always a crowd pleaser here at the ranch! Freezes well.
