Eggs and Sausage Casserole
From COUNTRY CHARM LOG CABINS
1 pound cooked and drained sausage
12 eggs
3 cups milk
1 tsp salt
6 slices bread, cut into 1 inch pieces
2 cups shredded Cheddar cheese
1/4 cup diced green pepper
1/2 cup diced onions

2 cups shredded Cheddar cheese
1/4 cup diced green pepper
1/2 cup diced onions
Beat milk and eggs, then add salt, bread and sausage. Stir in onions and green pepper. Pour into 9"x13" pan. Sprinkle with cheese. Refrigerate overnight.
Bake at 350° for one hour. This goes well topped with salsa when serving.
