Pumpkin Nut Bread
From CASA SEDONA BED AND BREAKFAST INNDirections
2 eggs
1 1/2 c. sugar
1/2 c. oil
1 10 oz. can pumpkin
1 3/4 c. all-purpose flour
1/2 t. salt
1 t. baking soda
1 t. cinnamon
1 t. allspice
1/2 c. chopped walnuts
In a large bowl, beat eggs slightly; add sugar, oil, and pumpkin; mix well. In a separate bowl, combine flour, salt, soda, and spices. Add to pumpkin mixture, stirring until just blended. Fold in walnuts. Pour into 2 greased loaf pans. Bake at 375 degrees for 40 - 45 minutes.
