Roasted Tomato Gaspacho (Gaspachotinis)





3 beefsteak tomatoes, cored & quartered
3 garlic cloves
½ English cucumber, peeled & sliced
Juice from 1 lemon
3 tbsp Olive Oil
3 sprigs of Thyme
Salt & black pepper to taste



Place tomatoes, garlic, & thyme in a mixing bowl, add 1 tsp of the oil & toss. Place on a roasting pan & roast in oven at 425 for 45 min. until tender. Remove from oven & cool completely. Add all ingredients into a food processor & mix until smooth. Season salt & pepper to taste. Allow to chill for several hours or overnight.

Serve in small Martini glass with crustini.
