Baked Pancakes

Directions

Preheat oven to 475 degrees.

In blender mix:

1 cup flour
1 cup milk
6 eggs
1/8 cup sugar
1/4 tsp baking powder
1 tsp vanilla
1/4 tsp ground nutmeg

In 10 inch oven proof skillet melt:

2 tbsp butter

Add:

2 small Granny Smith Apples, peeled, cored and sliced thin (too much apple will cause pancake not to rise)
Mix lightly
Pour batter on top of apples, do not mix.

Sprinkle with:

cinnamon
sugar

Bake for 15 minutes, then reduce heat to 375 degrees and bake an additional 10 minutes
Serve immediately with warm maple syrup
