Eggs in a Basket

From CALICO INN BED & BREAKFAST
12 very thin but not shaved slices of ham
8 eggs
1- ½ c half & half or light cream
½ tsp lemon pepper
½ tsp onion powder
½ tsp garlic powder
6 oz. shredded sharp cheddar or mixed blend cheese.

Preheat oven to 325 degrees. Spray nonstick muffin pan very lightly with vegetable oil spray. Place ham slice in each muffin cup to form basket. Trim with kitchen shears if necessary. Beat eggs, cream and seasonings in bowl with mixer or stick blender. Pour egg mixture into large measuring cup with spout. Fill ham baskets until ¾ full with egg mixture. Sprinkle heaping tablespoon of cheese on top of each basket. Bake 30 minutes or until toothpick comes out clean. 6 large muffin cup servings.

Note: Nice served on plate with buttered croissant or muffin and fresh fruit arrangement.
