Fines Herb Cheese Souffle

Directions

Measure out Shredded/Grated cheese to a large bowl.  Sift flour and baking powder together and add to shredded cheese.  Toss herbs, flour and cheese until the cheese is evenly coated.

In a separate bowl, mix together the sour cream and feta cheese until they are similar to the consistency of cottage cheese. Add to cheese mixture.

In a separate bowl, beat the 12 eggs on high speed for 4 minutes.  This will make your souffle fluffy and light, so it is important to beat them the entire time.

Fold eggs into the cheese mixture. 

Pour into a greased 13x9 pan and bake at 350 degrees for 30-35 minutes.  Cooking time may take longer on humid days.

Cool briefly and serve.
