Vermont Maple Bran Flax Muffins

The benefits of flax seeds are numerous and include constipation relief, clearing up acne, smooth skin, they assist in building muscle and burning fat, they're good for heart health and they might even help with depression and arthritis. Like salmon they are high in Omega 3 fatty acids. This is a great low carb high fiber muffin packed with nutrition.

1/2 cup bran
1/4 cup ground flax seed
1/2 cup plain yogurt or buttermilk
1/2 cup Maple syrup
1 egg
1/4 cup margarine (melted)
1 1/4 cups whole wheat flour
3 teaspoons baking powder
1/2 tsp salt
1/3 cup raisins, cranraisins or chopped nuts
granulated sugar to sprinkle on top

Preparation:

  1. Combine all muffin ingredients. Stir just until moistened.
  2. Spoon into 12 muffin cups (paper lined). Sprinkle with granulated sugar for a crunchy muffin top when baked.
  3. Bake at 400 degrees 18 to 20 minutes.
