Brierley Hill Tortilla Casserole
From BRIERLEY HILL BED AND BREAKFAST| Serves 8 Use 9x13 pan |

| 6 | Corn tortillas cut into strips |
| 6 | Tbsp chopped green chilies |
| 1 | Lb Chorizo sausage (may substitute any kind of meat) |
| 2 | Tbsp Onion |
| 8 | Ounces Colby / Jack cheese, grated |
| 10 | Eggs |
| 3/4 | Cup whole milk |
| 1/2 | tsp Cilantro |
| 1/8 | tsp black pepper |
| 1/2 | tsp Garlic Salt |

Cut up Chorizo sausage and cook in skillet with onion. Drain and set aside. Spray applicable size baking dish with Pam™. Layer half of the tortilla strips, green chilies, sausage and cheese. Repeat with other half. Beat the eggs, milk and spices in a mixer and pour over the layers in the dish. Cover and refrigerate overnight. In the morning, preheat oven to 350°. Bake for 35 min (7x11) or 45 minutes (9x13) until bubbling around the edges. Let stand 5 minutes or until the center is solid. Garnish with sliced tomatoes and serve with salsa & sour cream. |
