Brierley Hill Tortilla CasseroleFrom BRIERLEY HILL BED AND BREAKFAST
Use 9x13 pan
|6||Corn tortillas cut into strips|
|6||Tbsp chopped green chilies|
|1||Lb Chorizo sausage (may substitute any kind of meat)|
|8||Ounces Colby / Jack cheese, grated|
|3/4||Cup whole milk|
|1/8||tsp black pepper|
tsp Garlic Salt
Cut up Chorizo sausage and cook in skillet with onion. Drain and set aside.
Spray applicable size baking dish with Pam™. Layer half of the tortilla strips, green chilies, sausage and cheese. Repeat with other half. Beat the eggs, milk and spices in a mixer and pour over the layers in the dish. Cover and refrigerate overnight.
In the morning, preheat oven to 350°. Bake for 35 min (7x11) or 45 minutes (9x13) until bubbling around the edges. Let stand 5 minutes or until the center is solid. Garnish with sliced tomatoes and serve with salsa & sour cream.
