Brierley Hill Tortilla Casserole

From BRIERLEY HILL BED AND BREAKFAST
Serves 8
Use 9x13 pan
6 Corn tortillas cut into strips
6 Tbsp chopped green chilies
1 Lb Chorizo sausage (may substitute any kind of meat)
2 Tbsp Onion
8 Ounces Colby / Jack cheese, grated
10 Eggs
3/4 Cup whole milk
1/2 tsp Cilantro
1/8 tsp black pepper
1/2 tsp Garlic Salt

Cut up Chorizo sausage and cook in skillet with onion. Drain and set aside.

Spray applicable size baking dish with Pam™. Layer half of the tortilla strips, green chilies, sausage and cheese. Repeat with other half. Beat the eggs, milk and spices in a mixer and pour over the layers in the dish. Cover and refrigerate overnight.

In the morning, preheat oven to 350°. Bake for 35 min (7x11) or 45 minutes (9x13) until bubbling around the edges. Let stand 5 minutes or until the center is solid. Garnish with sliced tomatoes and serve with salsa & sour cream.
