Marsala Ricotta CakeFrom BREWERY GULCH INN
A DISTINCTIVE CRAFTSMAN-STYLE B&B
Cooking Time:45 to 60 minutes
- 1 c Sultans or raisins
- ½ c Marsala
- 2 lb. Ricotta cheese
- 6 Eggs
- ½ c Flour
- 1 tsp. Cinnamon
- 1 tsp. Nutmeg
- 1 tsp. Vanilla
- 1 Lemon, zested
- 1 Orange, zested
- 1 c Sugar
Soak raisins in marsala for 1 hour.
Place ricotta in a mixing bowl and set mixer on low. Add the eggs one at a time until all are incorporated into the ricotta in a smooth, homogenous mixture.
Mix together and whisk into ricotta mixture until fully incorporated.
Butter and flour one 10” spring form pan. Pour mixture into pan and bake at 350 degrees until set (approximately 45-60 minutes).
