Preheat oven to 325 degrees
2 1/2 cups unbleached flour
1/2 teasp. baking soda
1/2 teasp. salt
1 cup unsalted butter at room temperature
1 cup light brown sugar
1/2 cup white sugar
2 large eggs at room temperature
1 teasp. pure vanilla extract
2 cups chopped dark chocolate such as Callebaut
1 cup chopped and toasted walnuts
Line a cookie sheet with a silpat liner.
In a medium bowl combine flour, baking soda and salt. Set aside.
In a large bowl, with an electric mixer, blend butter and sugars. Add eggs one at a time and vanilla extract and mix on low speed. Add flour, chopped chocolate and walnuts and mix on low speed until just incorporated.
Use a 1 1/2 inch ice cream scoop to form the cookies. Drop each cookie on the silpat liner 2 inches apart.
Bake for 15 min. until golden brown.
Remove cookies immediately and cool.
