Apple Pancake

Ingredients: (Serves 4)
Preheat oven to 400

3/4 cup unbleached flour
3 tblsp. sugar
1/4 teasp. salt
3 large eggs
3/4 cup whole milk
2 lg. Granny Smith apples, peeled and thinly sliced
1 tblsp. unsalted butter, melted
2 tblsp. brown sugar, firmly packed
1/2 teasp. ground cinnamon
2 tblsp. unsalted butter, melted

Directions:
Mix the flour, sugar, salt, eggs, milk, and 2 tblsp. of melted butter together in a medium mixing bowl.
Heat 1 tblsp. melted butter in a non-stick pan add apples and cook until barely done.

Spray a 10-inch ovenproof skillet with non-stick spray. Preheat skillet over medium heat. Pour the batter all at once, and cook until set.

Lay sautéed apples over top, completely covering the surface.

Combine brown sugar and cinnamon; sprinkle over top of the apples. Pour the remaining 2 tblsp. of butter over all. Bake in a 400 degree oven for 6-8 minutes. Cut into wedges. Place a wedge on each serving plate and dust with powdered sugar. Serve with warm maple syrup.
