Baked Blueberry French Toast

60-70 minutes

Ingredients

  • 1 loaf Crusty French Bread or Bagels
  • 12 oz Cream Cheese, softened
  • 8 Large Eggs, beaten
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  • 1/2 cup Milk
  • 1/2 cup Plain Yogurt
  • 1 1/2 cups Blueberries

Directions

Preheat oven to 350 degrees.

Spray a 9x13 dish with non-stick spray (or 8 ramekins).

Cube bread and spread in dish.

Sprinkle blueberries over bread.

Mix cream cheese, eggs and syrup until smooth.

Pour over bread and let soak for 30 minutes.

Cover with foil and bake 15-20 minutes (until bubbly).

Remove foil and bake another 15 - 20 minutes until golden.

Serve with warm blueberry syrup or whipped cream.
