Peach Muffins
From BILTMORE VILLAGE INN
1 cup whole wheat flour 1 cup all purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp ground cinnamon 1/2 tsp allspice 1 egg 2/3 cup brown sugar 3/4 cup milk or buttermilk 1/4 cup oil 1/2 tsp almond extract 1 cup diced fresh peaches In a medium-sized bowl, combine dry ingredients. In a large bowl beat together egg, brown sugar, milk, oil and extract. Add the dry ingredients and mix. Add peaches and gently fold together. Fill greased muffin pans 2/3 full. Bake in a 375-degree oven for 20-25 minutes. Makes one dozen |
