Coconut and Oatmeal Drop Cookies

Guests are raving about these lovely and easy to bake oatmeal drop cookies with a twist!

Ingredients

  • 1 cup granulated white sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1tsp baking powder
  • 1 tsp baking soda
  • 2 cups all purpose flour
  • 2 1/2 cups shredded coconut
  • 1 cup chopped pecans
  • 2 cups old fashioned oats
  • 1 cup butter

Directions

Heat oven to 350 degrees

Grease two cookie sheets

Cream butter and both sugars until light and fluffy

Add egg and vanilla

Add dry flour and dry ingredients until well combined

Stir in oats, nuts and coconut

Drop teaspoon sized balls on cookie sheet

Bake approx 12-14 minutes until lightly browned

Leave on baking tray about two minutes until set

Transfer to wire rack for cooling
