Harvest Cookies

Ingredients

  • 1/4 Teaspoon Ground nutmeg
  • 1/4 Teaspoon Ground cloves
  • 1 Teaspoon Vanilla extract
  • 1 Egg
  • 1/2 Cup Vegetable oil
  • 1 Cup Shredded apple
  • 1/2 Cup Golden raisins
  • 1/2 Cup Chopped pecans
  • 1 Cup All-purpose flour
  • 1 Teaspoon Baking soda
  • 1/2 Teaspoon Salt
  • 1 Cup Uncooked rolled oats
  • 1/2 Cup Dark brown sugar
  • 1 Teaspoon Ground cinnamon

Directions

Combine dry ingredients in a large bowl and mix well.  Beat egg, oil and vanilla extract.  Stir into dry ingredients and stir together.  Add apples, raisins and pecans and mix.

 

Drop by teaspoons onto cookie sheet that has been sprayed with cooking spray or lined with parchment paper. 

 

Bake at 350 degrees for 10 to 20 minutes or until lightly browned. 

 

Allow to cool for 15 minutes.  Transfer to wire racks and cool completely.

 

Makes 2 1/2 dozen.
