6 peopleThese are wonderful as a breakfast dish served with bacon and sausages. (maple syrup optional) OR make a great vegetable side dish - especially good served with roast chicken or turkey - We always have these at Thanksgiving Dinner
Ingredients
- 1 cup All Purpose Flour
- 1/4 cup Sugar
- 1 tsp Baking Powder
- 1/4 tsp salt
- 2 Eggs - beaten
- 2/3 cup Corn - frozen (defrost) or canned (drained)
- 1 can Creamed Corn
- oil Vegetable Oil to fry fritters
Directions
. mix dry ingredients
. stir in eggs, creamed corn and corn
Put oil in skillet or saute pan to a depth of about 1 inch
Heat until a a bread cube dropped in fat will fry to a golden color.
Drop spoonfuls of fritter batter/mixture into hot oil to cook. turn once to cook other side.
Drain on paper towels - best when straight out of the skillet as they are nice and crispy but can be kept warm in low oven
