Strawberry Rhubarb Fool

Ingredients

  • 1 cup cooked rhubarb, cut small with 1 cup sugar
  • 1 cup diced srawberries
  • 1/2 cup Drained yogurt
  • 1 cup lite cool whip

Directions

The night before put 1 cup plain yogurt into a coffee filter hung over a plastic jar (so the whey can drip out into it).  I use a permanent filter and it fit nicely into the large yogurt containers.  Discard the whey in your compost container.

Cook the rhubarb with sugar and cool

Add diced strawberries and drained yogurt.

Right before serving fold in one cup of cool whip.  Serves 4. Place in pretty glass bowls.
