Morning Scottish Scones

4 1/2 cups biscuit mix
3/4 cups sugar
1 1/2 teaspoons grated orange or lemon rind
1 cup raisins
3 eggs, beaten
2/3 cup milk (approximately)

Combine biscuit mix, sugar, orange or lemon rind,and raisins. Combine eggs and milk and add to dry mixture. Knead lightly. Roll into rectangle. Cut into squares, then cut squares into half from corners. Brush with slightly beaten egg whites. Bake at 425 degrees on baking sheet for 10-12 minutes.
