Charlene's Quick Breakfast Taters

Many guests have asked for this recipe. Perfect for that extra side dish. I serve it with my Three Cheese Crustless Quiche recipe. Guests have also said they would serve it for dinner. I like to add enough paprika so the potatoes have a light red color.

1 small-sized bag tater tots
1 small bell pepper(chopped)
1/2 onion(chopped)
1 cup ham(cubed)
dried parsley flakes
garlic powder
olive oil

Set Tater Tots out first thing in the morning to lightly thaw. Saute bell pepper and onions with olive oil in a large frying pan until tender. Add Tater Tots and ham. As Tater Tots cook break up with a spatula. May need to add more olive oil while cooking. Sprinkle with paprika, garlic powder, dried parsley flakes, salt and pepper to taste. Cook until taters are done. TIP: I usually lightly spray the pan first with a non-stick cooking spray. Garnish top with fresh parsley.
