Buttermilk Cornbread Muffins

Ingredients

  • 1 cup Quaker Yellow Corn Meal
  • 2 tbsp All Purpose White Flour
  • 2 tsp Baking Powder
  • 1/4 tsp Arm & Hammer Baking Soda
  • 1/8 tsp Great Value Iodized Salt
  • 1 tsp sugar - granulated
  • 1 Grade A Large Egg
  • 1 cup Buttermilk (Reduced Fat 1.5% Milkfat)
  • 2 tsp canola oil

Directions

Preheat oven to 400 degrees. Mix all of the ingredients together. Pour into a 6 muffin pan. Place in oven and bake for 20 mintues. If not brown enough after the 20 mintues, turn on broiler until muffins are browned to your liking, no longer than 3 - 5 mintues.
