Pecan Butter BallsFrom ALLAIRE TIMBERS INN
- 2 cups flour
- 1/2 teaspoon salt
- 1 cup soft (not runny or whipped) butter or margarine
- 2 teaspoons vanilla
- 2 cups plus 1 cup minced pecans
- red and green decorator sugar
- 1/4 cup granulated sugar
In medium bowl mix four, sugar and salt together. Add butter and vanilla. Work with hands or spoon until well blended. Add 2 cups minced pecans and blend together thoroughly.
Shape into 1 inch balls. Roll balls in the remaining 1 cup minced pecans, or red or green sugar. Put on ungreased cookie sheets. Bake at 325 degrees for F for 25 minutes or until pale brown. Remove to wire racks.
