Chili Relleno Bake



8 servings



12 eggs
1/2 cup all purpose flour
1 tsp. baking powder
1/2 tsp salt
2 cans of 4oz chopped green chilies
2 cup of mixed onions, red and green peppers
2 cups of cottage cheese
6 oz. melted butter (cooled)
2 cups of grated cheese (a mixture of cheddar and pepper jack is best)


Preheat oven to 425 degrees. Grease 9x13 inch glass dish.

In large mixing bowl, mix ingredients all together in the order in which they are listed.

Pour mixture into the prepare dish.

Bake at 425 for 15 minutes, reduce heat to 350 and continue to bake for 30 minutes or until the center is set. Cover for at least 20 minutes to prevent browning.

To serve 10 to 12, use half as much ingredients again and cook in larger glass dish.
