Blueberry Muffins

No breakfast here in Maine would be complete without traditional Blueberry Muffins. These are stuffed full of fruit making them moist and yummy!

Yields 12 servings. Preparation time: 45 minutes

2 Eggs
3/4 Cups Sugar
1 Cup Blueberries
1 Teaspoon Vanilla Extract
2 Cups Flour
2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/2 Cups Milk
1 Stick Butter

Preheat oven to 375°F. Sift together flour, baking powder, and salt. Cream butter and sugar together. Blend eggs and vanilla extract with the sugar and butter mixture. Add flour mix alternating with milk until combined. Fold in blueberries. Place mix in a greased and floured muffin tin. Bake for 25 to 30 minutes or until tops of muffins are golden brown.
