Cheesy Mashed Potato PancakesFrom THE INN AT HERMANNHOF
Cheesy Perfect for left over mash potatoes from your Holiday Dinner!
1 large onion, chopped
4 slices bacon, chopped
2 cups of mashed potatoes and 1/4 cup of cheddar cheese mixed or 1 pouch cheesy mashed potatoes (instant)
½ cup flour
1 egg, lightly beaten
Cook and stir onion and bacon in large skillet on medium heat until bacon is crisp and onion is tender.
Drain, reserving 1 tablespoon of drippings in skillet.
Add onion mixture, flour, and egg to the prepared potatoes - mix well.
Heat reserved drippings in skillet.
For each pancake, spoon ¼ cup of potato mixture into skillet.
Smooth with back of spoon to create a 3 inch patty.
Cook 2 minutes on each side or until crisp and golden brown on both sides.
