- 3 cups Idaho potatoes, peeled and grated
- 1 tbsp Butter, melted
- 1 tsp Creole seasoning
- 1/2 plus 1/8 tsp Salt
- 1/4 cup Half-and-Half
- 4 Eggs, large
- 1/4 cup Parmesan cheese, fresh, finely grated
- 1-1/4 tsp Ground black pepper
- 1 cup Asiago cheese
- 2 lbs Bacon, cooked and chopped

How-To
Crust
- Preheat oven to 425 degrees
- Lightly grease 9-inch round pie pan
- In medium bowl combine, potatoes, butter, creole seasoning, and salt
- Add Parmesan cheese
- Press potato mixture into the greased pie pan (sides and bottom)
- Bake until potatoes are set and golden brown (20 to 25 minutes)
- Remove from oven and let cool
The Yummy Part
- Reduce oven temp to 350 degrees
- In separate bowl, mix remaining ingredients and pour into potato crust
- Bake until set, slightly soft and puffy and golden brown (about 30 minutes)
- Cool for 20 minutes, then serve and enjoy!
- Garnish as desired (remember, presentation only enhances an already-fabulous dish!)
