In a Jam Coffee CakeFrom A VIEW TO REMEMBER BED & BREAKFAST
Use homemade Jams for a special touch
2 C Flour, 1/2 C Sugar,1 TBSP Baking Powder and 1/2 tsp Salt 1/3 cup Butter 1 beaten Egg and 3/4 C Milk 1/2 cup of one flavour of Jam 1/2 cup of a different flavour of Jam
Topping- 2/3 C Brn Sugar,2 TBSP Flour cut in 2 TBSP of Butter and add 1/2 chopped nuts
Combine dry ingredients.Cut in butter with Pastry blender. Add Egg and Milk and stir till moistened. Spoon batter into 9 inch pan.
Spoon both Jams over cake in different areas and swirl through the batter with a knife.
Sprinkle topping evenly over top.
Variation - subsititue 1/2 c cut up fresh fruit for one of the jams
Bake at 400 for 25-30 minutes or until done.
Cut and serve while still warm - delicous!
