Fresh Fruit Coffee Cake or Muffins

The recipe has endless possibilities- our favourite fruits to use are peaches,rhubarb,cherries and apples- even a combination of fruit is delicious.

Directions

 

1/2 c butter, 1 1/2 c brown sugar, 1 egg, 2C flour, 1 tsp baking soda, 1 c buttermilk, 1 1/2 c diced fruit of your choice

1/2 c brn sugar mixed with 1.5tsp of cinnamon for topping

 

Cream butter and sugar until fluffy and beat in egg.

Add flour and baking soda alternately with Buttermilk to creamed mixture.

Gently fold in fruit.

Pour batter into 9 x13 pan or use large muffin tins.

Sprinkle topping over cake.

Bake at 350 for 30 minutes or until done.
