Cheese Pie From the Cottage at Winjes FarmFrom THE COTTAGE AT WINJES FARM
- 1 Camembert or Brie Wheel
- 1 Sheet flaky pastry
- 1 tablespoon good chutney or fruit preserve
Method (Turn oven to preheat to 350)
Gently unfold pastry into a round baking dish just a tad bigger than your cheese.
Place unwrapped cheese on pastry.
Spread chutney or preserve over top of cheese (more than a tablespoon, if you like!)
Trim pastry so that it just meets in the middle of the dish.
Fold pastry artfully into the center of your dish, sprinkle with something wonderful – sesame seeds, sea salt, black pepper – whatever you fancy. Or nothing.
Bake in oven until pastry browns beautifully.
Serve with a glass of good port, a piece of luscious fruit and some rice crackers.
