Cranapple Walnut Cake presented by Carole's Yellow Cottage Bed & Breakfast

Ingredients:
1 cup light brown sugar (may use more)
1/2 cup vegetable oil
2 cups flour (may use whole wheat)
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp salt
2 eggs
1 tsp vanilla
2 cups cooking apples, sliced
1/2 cup walnut or pecan pieces
1/2 lb fresh, whole raw cranberries
Cream together oil and sugar. Add eggs and vanilla, and beat well.
Sift together flour and dry ingredients. Add to first mixture and
stir until thoroughly combined. Stir in apples, cranberries and
nuts. This is a very thick mixture that bakes into a
wonderfully moist fruit cake. Heat oven to 350 degrees and bake in well greased 9" x 13" pan for 45-50 minutes.
