10 slices of stale white bread
salted butter
3 oz sultanas
3 oz raisins
1 1/2 pints of "half and half"
8 eggs
6 oz sugar
vanilla pod or pure vanilla essence
fresh nutmeg
Grease a deep-sided pie dish. Butter the bread generously. Layer bread and butter with sultanas and raisins in the pie dish, finishing with bread and butter. Mix thoroughly the "half and half", eggs, sugar, and the vanilla pod grains or three drops of vanilla essence. Strain the mixture into the pie dish. Leave the dish in the fridge for an hour so that the bread soaks up the mixture. Sprinkle the pudding liberally with granulated sugar and the freshly grated nutmeg. Place the pie dish in a larger dish with water. Bake in the water bath in the oven at 350° for about an hour, until the pudding has risen and is firm to the touch.
For a special occasion replace 1/2 a cup of "half and half" with brandy.
