Ingredients:
2 cups flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
2 tablespoons brown sugar
1 teaspoon salt
1/2 cup cooked pumpkin
2 tablespoons canola oil
1 1/2 cup milk
1 egg
In large bowl, combine dry ingredients. In small bowl, combine milk, pumpkin, egg and oil. Stir liquid mixture into flour mixture, until dry ingredients are moistened. Batter will be thick. Spray hot griddle with cooking spray, and then pour about 1/4 cup batter onto the griddle, cook until surface appears dry, turn cook another 2 to 3 min.
