White Chocolate and Cranberry Oatmeal Cookies presented by The White Oak Inn

Preheat oven to 350 degrees
2 cups flour
2 1/2 cups quick cooking oats
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 cup + 2 Tbsp. Butter Flavor shortening
1 cup brown sugar
1 cup white sugar
2 large eggs
1 tsp. vanilla
1 tsp. cinnamon
1 1/2 cups white chocolate chips
1 cup dried cranberries
Mix together the flour, oatmeal, baking soda, baking powder and salt and set aside. Cream shortening with white and brown sugar and beat in the eggs and vanilla. Mix in the chips and cranberries. Mix in the dry ingredients. Prepare cookie sheets by spraying with Pam or lining with parchment. Form dough into 1 1/2 inch balls, place on cookie sheet and flatten slightly. Bake for approximately 10 minutes, or until golden. Let cool slightly before transferring to cooling racks. Try not to eat all of them before they cool! Makes about 3 1/2 - 4 dozen.
