Since ancient times, the inhabitants of West Mexico were known for their exquisite taste for food. As part of a “mestizo” country, in Puerto Vallarta and the Bahía de Banderas Area you will find the best of the indigenous and European world, unique recipes that blend in native products with the best of international cuisine.
In Villa Bella we are very proud of our Mexican Heritage and would like to share with you few of our favorite breakfast, or “almuerzo” (the Mexican usage of a rich breakfast-lunch meal), recipes.
These fried eggs are served on tortillas and covered with a picante tomato sauce.
Ingredients:
The Sauce:
1 Tomato broiled
1 or 2 green chilies toasted
1/2 clove garlic, peeled
1 tablespoon of peanut oil
A thick slice of onion finely chopped
1/8 teaspoon salt, or to taste
Blend the tomato, chilies and garlic together to a fairly smooth sauce. Heat the oil and cook the onion, without browning, until it is soft. Add the blended ingredients and salt and cook over a brisk flame for about 5 minutes.
To prepare the eggs:
Heat 2 tablespoons of peanut oil and fry two small tortillas lightly on both sides, place them on a dish. In the same oil fry the eggs, then place them on the tortillas. Cover the eggs with the warmed sauce and serve immediately.
