This is one of the many apple desserts that are found throughout the Middle West, especially in the states where Johnny Appleseed travelled in the frontier days, distributing his apple seeds.

6 to 8 green cooking apples
4 tablespoons maple syrup
3 tablespoons butter
1/2 cup sugar
1 egg beaten
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt

Preheat the oven to 400 degrees F. Peel, core and thinly slice the apples. Layer them in a shallow 3-quart glass baking dish. Pour the maple syrup over them, letting it dribble down between the layers. Cream the butter and sugar and mix in the beaten egg. Sift together the flour, baking powder and salt and mix with the butter and sugar to make a stiff batter. Spread this over the apples. Let it stand for 5 minutes to settle. Bake in the center of the oven for 35-40 minutes or until the apples are cooked through and a cake tester or skewer inserted in the center comes out clean. Serve hot or at room temperature, with cream. Serves four
