6 eggs
1 (10 oz) frozen broccoli (thawed,drained,chopped)
1 c. shredded cheese
1/2 tsp. salt
1 sm. onion, chopped
1/4 tsp. pepper
1/2 c. diced roasted red pepper
1/4 c. cooked meat(optional)
Whisk together first four ingredients; stir in remaining. Coat 10" fry pan with cooking spray and heat over medium heat. Add egg mixture. Cover and cook 8-10 minutes until top is set. Slide onto platter.
