Serves 20-25
1 large ripe pineapple.
2 medium oranges, peeled and sectioned.
1/2 c. pineapple juice.
2 T. orange liquor.
2 c. strawberries, halved.
2 c. grapes.
2 medium Kiwi, peeled and sliced.
Cut pineapple in half through green top. Remove fruit from rind without piercing rind. Remove core. Set shells aside. Cut pineapple into chunks, lightly sprinkle with salt and let set 1 hour. Combine orange sections, pineapple, pineapple juice and liquor. Marinate in refrigerator 2-4 hours. Just before serving add remaining fruit. Gently stir and serve in pineaple shells.
