Baked Eggs with Cheese and Basil Sauce presented by The Newnham SunCatcher Inn

3 tbsp margarine or butter
2 tbsp flour
1/4 tsp salt
1/8 tsp pepper
1 tsp dried basil
1 cup milk
4 eggs
1/4 cup shredded mozzarella cheese
In a small saucepan melt the margarine or butter. Stir
in the flour, salt, pepper, and dried basil. Add milk
all at once. Cook and stir over medium heat until
thick and bubbly. Cook and stir 1 minute more. Remove
from heat. Spray four 6 oz custard cups with nonstick
coating. To assemble, spoon about 2 tbsp basil sauce
into each dish. Gently break an egg into the center
of each dish. Spoon remaining sauce on top of eggs.
Bake at 350 for 18 to 20 minutes or until egg is set.
Sprinkle with cheese. Let stand till cheese melts. Garnish
with fresh basil, if desired. Serves 4.
