I hate grits that are so bland you taste only mush. I love grits with
character and panache! I had some friends who grew up in Paducah, Kentucky,
and I always teased them of dressing as if they were from the southwest . .
. the western boots, shirts, hats, and all the other trappings. Some people
in Paducah think they're in Texas, but they're just Kentuckians like me! My
grits are pure Kentucky, but they taste like they came from Texas.
Use the recipe on the box of your favorite grits. This time add a couple of
slices of pepper cheese, a good slice of country butter, and a tablespoon
(or more to taste) of jalapeno juice from the jar in your refrigerator. Mix
well to a creamy texture and take off the stove just a little earlier than
you normally would. The grits will keep the creamy texture and firm up more
on the way to the table. Watch your family smile like they're from Paducah.
