Grits Souffle presented by The Shaw House Bed & Breakfast

1/2 cup grits
2 1/2 cups boiling water
1 tsp salt
3 eggs, separated
2 Tbsps butter
1/2 tsp cream of tartar
Preheat oven to 400 degrees. Slowly stir grits into boiling water - add salt and cover and cook until grits are done. Remove from heat and beat in egg yolks and butter. Cool. Beat egg whites until foamy. Add cream of tartar and beat until stiff peaks form. Stir into grits. Turn into well greased 1 1/2 qt souffle dish. Bake 30 minutes. 6 servings.
