Traditional Recipe
3 eggs
2 cups buttermilk
1 tbsp sugar
1/2 tsp salt
1 tsp baking powder
2 1/2 cups flour
Beat eggs and blend with milk in separate bowl. Sift the dry ingredients together. Make a large indentation in the center of the dry mixture and slowly stir in the liquid, stirring as you pour. Let batter rest a few minutes. Heat the Aebleskiver pan. Add a little oil to each compartment of the pan, when oil begins to smoke add the batter. When cooked on one side, add fruit or jelly and turn using two forks, one on each side. When thoroughly baked, sprinkle with confectioners' sugar.
Althea's Recipe
2/3 cup Bisquick
2/3 cup milk
1 tbsp sugar
1 tsp vanilla
3 eggs separated
In a large bowl add milk, egg yolks, vanilla, and sugar. Beat egg whites to stiff, but not dry, form. Add flour to wet mixture and fold in egg whites. Add oil to each compartment of the pan and heat. Once heated, add filling to each compartment, measuring each 3/4 full. To turn the Aebleskiver I have found that a shish-ka-bob stick is the most useful. The Aebleskiver will not turn until it is ready. I do not care for the wet center that fruit or jelly makes. Instead, I serve a fruit compote or jelly on the side of the plate. Have fun with this! Make sure you follow the directions for curing your pans or your product will stick. Clean pans using only oil. Do not use soap or water. They will become sanitized once you heat them.
