Ingredients:
5 eggs
1 cup milk or half and half
1 cup cheese (grated colby & monterey works best)
1/4 cup chopped onion
1/4 cup chopped red pepper
1 Tlbs. corn meal
Directions:
1. Preheat overn to 350 degrees.
2. Mix all ingredients except corm meal in medium bowl.
3. In a non-stick skillet that will take the temperature in the oven, spray with cooking spray and coat with corn meal. (I use a 8 inch commercial skillet).
4. Pour egg mixture in skillet and bake for 45 minutes or until top of quiche is golden brown.
Makes 4 Medium Servings.
Easily doubled for larger skillets.
