This is the best recipe...and quite easy. All you need to start is a
loaf of purchased french bread...unsliced. Slice the bread into
pockets. Don’t use the ends. Start slicing the first slice all the
way through the loaf, the second only 3/4 of the way (to make a place to
stuff your bananas) through, the third all the way through and so on.
This makes a slice that is hinged.
The rest of your ingredients are:
1 loaf of bread (mentioned above)
2 bananas, not overripe
1/4 cup brown sugar
1/4 cup pecans (can be omitted)
3 large eggs
3/4 cup milk
1/2 tsp vanilla
1/4 cup unsalted butter
Slice the bread as we discussed above, with each slice being about 1/2
inch (1 inch total). Peel and slice your bananas. Lay the bananas in
the pocket, and sprinkle brown sugar/nut mixture on top. Mix together
your eggs, milk, and vanilla. Dip each french toast piece into egg
mixture and place into skillet with melted butter. Fry until brown.
Add more butter if it runs low. It is best to cook these in a smaller
skillet to keep the butter from smoking, so keep warm in oven if you
are cooking for a crowd.
Enjoy these wonderful banana toasts with powdered sugar, maple syrup, or
even whipped cream.
