Applesauce Pancakes with Apple Cider sauce presented by Rosebelle's Victorian Inn

Ingredients:
1 egg
1/2 tsp. salt
1 c. sifted flour
3 tsp. baking powder
1/2 c. milk
2 tbsp. melted butter
1/2 c. applesauce (preferably homemade)
Combine all ingredients, then cook on a pre-heated griddle @ 360 degrees F. Serve with cascading Apple Cider Sauce. Makes 8 pancakes.
Apple Cider Sauce
1 c. pure apple cider
1/2 tsp. Cinnamon
1/4 to 1/2 c. sugar
1 tbsp. Fresh lemon juice
1 tbsp. Cornstarch
2 tbsp. Butter
Mix all the ingredients, except for butter, in a saucepan over moderate heat until mixture thickens. Boil for 1 minute. Remove from heat and stir in melted butter. Serve sauce over hot pancakes and enjoy!
