Goat Cheese Omelette presented by Quinta Zoe

Serves two
3 eggs
2 oz plain goat cheese
1/8 tsp salt
Beat the eggs in a small mixing bowl. Add two tsp water and salt and beat very well. Spray-oil a non-stick skillet. Add half the egg mixture,
swirling over the pan evenly. Cook 30 seconds. With spatula, push sides of omelette to center and tip pan for uncooked egg to cover. Sprinkle half of goat cheese over one half of omelette. Fold omelette in half. Continue cooking until bottom is lightly browned. Turn over and cook another 30 seconds. Slide onto a plate. Repeat with second half of egg mixture. Serve with toast and jelly.
