Brown Sugar Streusel Muffins presented by Prince Solms Inn

2 cups plus 3 TBSP all-purpose flour, divided
2/3 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
2/3 cup milk
1/2 cup (1 stick) butter, melted
1 large egg
2 tsp vanilla extract
3 TBSP firmly packed light brown sugar
2 TBSP cold butter, cut into pieces
Preheat oven to 400 degrees. Coat 12 muffin cups with cooking spray. Combine 2 cups flour, granulated sugar, baking powder and salt in a large bowl; mix well. Add milk, melted butter, egg and vanilla; stir just until combined. Spoon batter evenly among prepared muffin cups.
Combine remaining flour and brown sugar in a small bowl; mix well. Cut in cold butter with a pastry blender until coarse crumbs form. Sprinkle mixture evenly over batter in cups.
Bake muffins until light golden, 15 - 20 minutes. Cool in pan on wire rack 5 minutes. Remove muffins from pan; serve warm or place on wire rack to cool.
