Brown Sugar Streusel Muffins presented by Prince Solms Inn Email this page to a Friend

2 cups plus 3 TBSP all-purpose flour, divided
2/3 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
2/3 cup milk
1/2 cup (1 stick) butter, melted
1 large egg
2 tsp vanilla extract
3 TBSP firmly packed light brown sugar
2 TBSP cold butter, cut into pieces

Preheat oven to 400 degrees. Coat 12 muffin cups with cooking spray. Combine 2 cups flour, granulated sugar, baking powder and salt in a large bowl; mix well. Add milk, melted butter, egg and vanilla; stir just until combined. Spoon batter evenly among prepared muffin cups.

Combine remaining flour and brown sugar in a small bowl; mix well. Cut in cold butter with a pastry blender until coarse crumbs form. Sprinkle mixture evenly over batter in cups.

Bake muffins until light golden, 15 - 20 minutes. Cool in pan on wire rack 5 minutes. Remove muffins from pan; serve warm or place on wire rack to cool.

Built in 1898 and located in downtown New Braunfels, Prince Solms is the oldest continuously operating inn in Texas.
New Braunfels, Texas (TX) Bed and Breakfast: The Comal Hotel (later renamed the Prince Solms Inn) was built in 1898. It was known to be the most romantic and most luxurious hotel in this area, as it is still today. We are located only a few blocks from downtown New Braunfels and many attractions. We now have on-site a spa called A great ESCAPE Bath Haus Spa located in our carriage house behind the Inn.
