Makes 24 jumbo muffins
12 oz Post Selects Banana Nut Crunch Cereal
1 C walnuts
3 C sugar
3 C white flour
2 C bran
5 t. baking soda
2 t. salt
1 t. cinnamon
2 mashed up ripe bananas
1 C oil
4 beaten eggs
1 quart buttermilk
Mix dry ingredients in a very large mixing bowl. Then add oil, eggs, and buttermilk. Blend just until dry ingredients are well mixed. Then mix in bananas. Can be stored for 7-10 days in a covered container in the fridge. Use only what you need to make 2 to 24 muffins. Bake 25 minutes at 400 F for jumbo size muffins; 15 minutes for regular muffins.
