Ingredients:
2 c. flour
1 1/4 c. sugar
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. finely grated carrot
1 1/2 c. finely grated apple
3/4 c. coconut
2/3 c. chopped pitted dates
3/4 c. pecans
3 beaten eggs
1 c. oil
1/2 tsp. vanilla
Directions:
In a mixing bowl, combine flour, sugar, soda, cinnamon and salt. In another bowl, combine carrot, apple, coconut, dates and pecans. Stir in beaten eggs, oil and vailla. Add to dry ingredients stirring until moistened. Grease muffin pans and spread batter into tins. Bake 375 degrees for 18-20 minutes. Makes about 24 muffins.
